2 tb Peanut oil
1 c Finely chopped red onion
1 ts Curry powder
Salt and pepper to taste
2 c Basmati rice
1/4 c Apple juice
2 c Water
1 c Fresh or frozen green peas
2 tb Toasted pine nuts
Basmati Rice with Peas And Pine Nuts Preparation
1. Heat oil in a large skillet over medium-high heat. Add onion, and sprinkle with curry powder, salt, and pepper. Cook 3 minutes, stirring occasionally. 2. Add rice, stirring to coat. Cook for 1 minute, stirring occasionally. Stir in apple juice, mixing well to combine. Stir in water. Cover and lower heat to medium-low. Simmer, tightly covered, for about 40 minutes, until rice is tender and water is absorbed. 3. If using fresh peas, stir them into the rice halfway through the final cooking time.
