1 Ripe papaya; peeled, seeded – sliced 1 tb Lemon juice 3/4 c Sugar 2 Eggs; beaten 1 c Milk 1 c Half & half; or whip. crea In blender or food processor fitted with metal blade, puree papaya and lemon juice. In a medium saucepan, combine sugar, beaten eggs and milk. Cook and stir over low heat until mixture thickens and coats a spoon. Add pureed papaya and half and half. Pour into ice cream canister. Freeze in ice cream maker according to manufacturer”s directions. Makes 1 quart. Per Serving: 164 calories – 4 g. protein – 25 g. carb. – 6 g. fat – 69 mg. chol. – 84 mg. calcium.
