2 Sweet potatoes; peeled &
-sliced about 1/4 inch thick
1 Onion; chopped
1/2 ts Ground ginger
Cumin; paprika
Parsley; chopped
1 Lemon ; juice of
Sweet Potato Salad 2 Preparation
Heat a bit of oil in a skillet. Saute onion & ginger. Add potatoes & 1/2 – 3/4 cup water. Bring to a boil & reduce heat & cover. Cook until tender but still a bit firm (make sense?)
