1 pk (3-oz) lemon- or
-lime-flavored gelatin
1 c Boiling water
1 lb Cottage cheese; sieved
1 cn (20-oz) crushed pineapple
1/2 c Chopped nuts
1 ts Horseradish
1 c Whipped cream
Green pepper or pimiento;
-chopped (optional)
Tangy Gelatin Salad Preparation
Dissolve gelatin in boiling water. Cool. Add sieved cottage cheese and other ingredients. Spoon into 6-cup mold and chill in refrigerator until firm. Yield: 6 servings. From <The Progressive Farmer”s Southern Country Cookbook>, by the editors of the ”Progressive Farmer Magazine”.
